So I’m currently just sitting out in the sunshine while it lasts, writing up this recipe for you lovely people kind of wishing I had some of these yummy pancakes to munch on to get me through. It’s making me hungry looking at the photographs. What pancakes you ask? Well it is the Peanut Butter Granola Pancakes that I have been making since I found out about the awesome brand known as Breakfast by Bella- if you don’t know who they are then I suggest you give the interview I conducted a read: Breakfast by Bella Interview. But long story short they create the most scrumptious granola ever all natural and vegan (of course!) that I am addicted too! You should be as well! The granola is just way too good to not enjoy. There are 3 flavours too choose from; Cacao Crazy, Nutty Nosh and of course the Peanut Butter Me Up that I will be using today in these pancakes.
I love to make pancakes at the weekends, trialling different mixtures and flavours from my Blueberry and Chocolate to this Peanut Butter one. I think I may have a problem when it comes to eating pancakes, they are just so quick and easy to make, your batter can create up to 10 pancakes or maybe even 12 mini pancakes perfect for a Saturday morning brunch. It really just depends on how big or small you make them. I am a big lover of granola and pancakes so of course I had to try combining the two of them and I will admit it was a great idea of mines. The two together is like a match made in pancake heaven!
Like I mentioned the granola in these Peanut Butter Granola Pancakes is the Peanut Butter Me Up range from Breakfast by Bella- and oh my goodness I have mentioned the words Peanut Granola and Pancake so many times already haha, lets hope you don’t get sick of hearing them because I know this recipe is perfect and you have got to try it out.
The granola is made up of 4 ingredients, just FOUR! Those ingredients are oats, peanuts, agave syrup & rapeseed oil, how simple is that, no added sugars like I mentioned above it is completely natural and all ingredients added are organically sourced- this is a dream product which tastes great and it is a perfect addition to my delicious pancakes. Not to mention great to snack on straight from the packet. I know some of you have a peanut allergy and may not be able to have this granola well you could definitely opt for the Cacao Crazy granola instead- it is a granola that has cacao nibs added in replace of the peanuts so perfect alternative and you will still be able to have these delicious pancakes for breakfast, lunch or even dinner.
So are you ready for the recipe? Let’s get into it
Peanut Butter Granola Pancakes
- 1 cup Plain Flour
- 1 cup Peanut Butter Me Up Granola (from Breakfast by Bella)
- 1 tbsp Baking Soda
- 1 tbsp Agave Syrup
- 1 tsp Vanilla Essence
- 1 cup Soy Milk
heat some oil in a frying pan probably at a low-medium heat
add the flour, granola, and baking soda to a large bowl
next add vanilla essence, agave syrup and soy milk to the bowl as well and give it a whisk until you get a pancake batter consistency (runny but thick enough to spoon out into the frying pan
when the pan is warm add a spoonful of the pancake batter, cook for about a minute lift the edge and see if it golden if so flip the pancake and let that side cook
when you have cooked all your pancakes, stack them up and add your favourite toppings
dig in and enjoy!
